Time to put to bed, once and for all, the “to-drink-or-to-hold” kerfuffle, so here goes: 90% of wines should be drunk within a year and only 1% should be aged for five years and above. Factors like vintage, producer, winemaking methods, varietal and just how thirsty (or depressed) you are matters, of course, but this is as blanket a statement as you’re going to get. Yes, I’ve been re-reading Kevin Zraly. How did you guess?
